  • Manuscript cookbook compiled by Maria Luisa Sanchez, a student of the Escuela de pequeñas industrias del estado Puebla, written in a ruled school notebook. Sanchez has written her name and course attending, "cocina," in the spaces provided on the printed title page. Written in several different inks, the cookbook was likely compiled over the course of several years. Recipes include ingredients, measurements, "modo de hacerlo," and some menus. Sanchez records a variety of Mexican chicken, seafood, pork, beef, and egg-based dishes; desserts, beverages, and wines; as well as a few recipes from other cuisines. Recipes include: "sopa casera," "huevos rellenos," "huachinango en salsa exelsior," "pollo saratoga," "chicharos à la crema," "pastel peruano," "helado de coco," "marquesitas," "macarrones napolitanos," "lengua a la escarlata," "sandwichs," "gelatina de vino," "choux ala crema," "adobo de pollo," "refresco de mamey," "lomo relleno," "asado economico," "budin de elote," "chorizo estilo Español," "jamoncillo de avellana," "vino de Zarzamora," "panque de limon," and many more. One dessert recipe appears to be named after herself, "Maria Luisas."
